One of my absolute favorite is Steve Hacketts solo on ”Firth of Fifth” from Genesis album ”Selling England by the Pound”. The solo that is easy to learn from TAB starts at 5:40 and the tune can be found here on Spotify:

In my opinion, "Stairway to Heaven" (Jimmy Page) - Led Zeppelin Led Zeppelin IV, 1971 is the best solo guitar of all time.
After watching that amazing performance in a video on FB2Mate, I can say that if Jimmy Page is the Steven Spielberg of guitarists, then “Stairway” is his Close Encounters. Built around a solid, uplifting theme—man’s quest for salvation—the epic slowly gains momentum and rushes headlong to a shattering conclusion. The grand finale in this case is the song’s thrill-a-second guitar solo.
